The rice we had last night is called
"Moros y Cristianos" or "Moors and Christians"
It got that name in the 8th century in Spain. The dark-skinned Moors were invading Spain (white) and the dark red beans/white rice has been called that ever since.
Don't confuse Moros y Cristianos with the other Cuban rice dish,
"Congri" which is Black Beans with with rice. Congri is also much more liquidy and sweet.
While there are many different recipes for Moros y Cristianos, here's one that you can try. No guarantee it will taste exactly like Alfredo's, but it should be close.
